I'm Ready

I'm so ready for spring! Right now it's same stuff different day. Grey Skies, gloomy waiting for the next snow storm. I need Spring...Daffodils, tulips, blue skies. I'm ready to be rejuvinated!

It's spring fever.... You don't quite know what it is you do want, but it just fairly makes your heart ache, you want it so!

Utah gymnasts Rock!

We went to watch the University of Utah gymnastics last night. They are stunning! They beat Michigan 197.525 to 195.350. They are ranked #1 for a very good reason. Red Rocks!

Make your own pizza. Yummy

Pizza Dough
1 c. and 2 T. Hot tap water
2 T. Olive oil or vegetable oil
3 c. flour (enough so dough is not sticky, but can be rolled out and handled easily)
1 t. sugar
3 t. salt
2 ½ t. yeast

Make sure you add the Hot tap water, yeast and sugar together. Allow to grow 5 minutes. Then slowly add the flour one cup at a time until each cup as been incorporated, and add the salt after the first cup of flour. Touch dough to make sure it is soft and bouncy to the touch. Mix and let rise until it doubles in size.
For more Italian flavor add basil and garlic powder to the dough. Roll out like regular pizza dough. Shape into any shape desired. Best to bake on cooking stones.

Fettuccini Alfredo Pizza
1 Pizza dough recipe
1 c. ranch dressing
1 t. garlic cloves, minced
2 t. basil
½ c. shredded Parmesan Cheese
Chicken or sausage
Green onions
Vegetables (Mushrooms, Zucchini, yellow squash, onions, etc.), diced or cut thin
Tomatoes diced small (optional)
Artichokes(optional)
Mozzarella Cheese
Fresh or dried parsley for garnish

Preheat pizza stone at 400 degrees. Roll out crust, place on cooking stone. Mix ranch, parmesan, basil and garlic in a bowl. Spread mixture over crust. Sauté meat and vegetables together until soft. Put sauce on dough, put meat mixture on top and then sprinkle with mozzarella cheese. Bake at 400 until golden brown.

Hangin' with Emma

Today was my lucky day! First coffee with Andrew, and then my niece and nephew came over. Emma has not been feeling well this week so she went to the doctor. After the doctor we all had lunch at grandma's. Emma wanted to hang out and so we painted, glued and cut stuff. What a bunch of fun. Gramdma meanwhile was hangin' with Kieran. What a great day off!! According to Emma you have to paint dressed up with fairy wings and have turtles watch.

Pay it forward....

Gift Giving Forward
I got this idea from Jenny, and I think it is really great! "the first 3 people to leave a comment on this post will receive, at some point during the year, a hand/homemade gift from me. What it will be and when it will arrive is a total surprise! The catch is that you must participate as well. Before you leave your comment here, write up a pay it forward post on your blog to keep the fun going. Then come back, let me know you're going to play, and sit back and anticipate the arrival of your gift! Remember that only the first 3 comments will receive a gift from me, so be quick!"
Let the fun and creativeness begin! Leave an address to where you want this gift to arrive! Sandra

A smothered burrito from La Frontera and a cute face to look at across the table! Who could ask for more? Now I'm going to dip some strawberries and dried fuits in chocolate! Yummy!I hope your day went as well as mine! XOXO

Gymnastics at the "U"

Last night we all went to the gymnastics meet to watch the University of Utah compete. Well about half way through Emma has to go "potty". Leslie was talking with a friend so mom asks me to take her. I guess she figured I could run faster. LOL :) We are running through the concourse and into the bathroom. Emma does not stop and goes into the first stall available. There was a line but my neice had to go! She does not want me in there with her but if she was falling in I wanted to be there to fish her out! She gets done and I figure well while I'm in here..... I get finished doing my business and pull up the undies.... Emma looks at me and says " Sanwa (she doesn't do d's) you have on your pretty panties!" I start laughing and so do the rest of the people! Oh the joys of being Emma's aunt! I guess she is just saying what we say to her! I'm still giggling.

Pedicures

There is nothing like having a pedicure!
Sitting in a comfy chair and someone else working on your feet!
The hardest part of a pedicure is choosing what color nail polish you want!
I chose RED with sparkles for Valentines Day! oh wait.... I always choose red!
I had one yesterday and I am still on my pedicure good feeling :)

This pretty much sums up my morning! I know it will get better but all I really want to do is snuggle back under the covers! Tilly (the dog) has the right idea. Since my day is going so well I am going to try the 100% organic "pit putty" today! Hmmmmm Can't hurt, right?
